Hate to say it, but you encouraged this behavior all along. Hand-feeding and then not expecting them to peck at your hands/feet in search of goodies? The more you coddle them sometimes, the less respect they have for you. Just like a dog....its so cute for them to jump up on you when they are a puppy. A 100 pound dog that knocks you down when it jumps up is a different story.
I do have to agree with the advice to hold them until they are submissive. It works on even the most aggressive roosters we've had. Flip them over in your arms and hold them like a baby. All they can think is OMG that crazy lady wants to hold me again and eventually learn to respect your space.
