I just whipped this up and left it sitting on the counter to rise until morning. I replaced 1 cup of all purpose with organic whole wheat, and added 3 Tsbp Honey and 3 Tsbp warm milk to the water after I let the yeast sit in the 3 cups of warm water. I mixed in the 1 cup of wheat flour first and let that sit in the mix for about 5 minutes before I added the unbleached all purpose. I'm going to bake a loaf in the morning... I'll let you guys know how it bakes up!
(Going to use a baking sheet but add a glass pan full of hot water while the oven is preheating. Spraying the inside of the oven with a mist of water for the first 5 minutes of baking should help make for a harder crust!)
