Here's an awesome cheese cake recipe. It's a little trouble to make but well worth it. WOW your family and friends at Christmas!!!
Pina Colada Cheese Cake
Crust
1 2/3 cup graham cracker crumbs
1/4 cup Sugar
1/2 cup Butter; melted
Filling
32 oz cream cheese; softened
3/4 cup Sugar
4 lg eggs
1 8 oz sour cream
16 oz cream of coconut
15 1/2 oz crushed pineapple in juice; drained well
2 tablespoons cornstarch
1 teaspoon Vanilla
1 teaspoon rum flavoring
1 teaspoon lemon juice
Topping
1/4 cup Butter
1/2 cup flaked coconut
1/2 cup finely chopped almonds
1/4 cup Sugar
Crust -
combine first three ingredients and press into bottom and 1 inch up the side of a 10" spring form pan. Bake at 350 degrees for 10-12 minutes. Cool on wire rack.
Filling -
Beat cream cheese on medium speed until smooth, add 3/4 cup sugar gradually beating well, add eggs one at a time and beat well between each. Stir in Sour Cream and next 6 ingredients. Spoon into crust and bake at 350 degrees for 1 hour and 20 minutes. Turn oven off and remove cake. Sprinkle with topping and place back in oven and leave door closed for one hour (leave oven off) Cool on wire rack and chill before serving
Topping -
Melt 1/4 cup of butter, and flaked coconut and almonds, saute until golden brown.
