How do you tell the difference between baby chickens and baby roosters?

They are all chickens, both male and female, but girls are called pullets and later on, hens. Boys are called cockerels, and later on, roosters. It varies. Some are easy to sex at hatch, some you must wait for the combs to turn pink or watch for very thick legs.
