For EEs, pink wattles at an early age and then red on the wings. It can be harder to tell because of the not standard comb they can have. Later hackle and saddle feathers will come in too. What about Easter eggers? I have 2, the same age, and their tails are growing in two different directions. Is that an indicator that they are two different sexes?
