Baked Egg Shells - check

Variable. They'll take different amounts depending on a number of factors. Just offer some and they'll take what they want. I always crumble (not strictly necessary) and give them more than they'll eat in a day or two. They'll regulate their own feeding.
 
Another important item. Please do not mix the shells in with their feed. Individual birds will need differing amounts, so let them regulate it themselves. For example- pre-layers, older birds and cockerels need less calcium than less-frequent layers who need less than more-frequent layers.

The same rule applies to feeding grit. The calcium and grit should be in separate containers so that they can take as much as they need.
