baking recipes to use up lots of eggs?

There is an egg casserole dish my wife makes for breakfast get togethers. I will have to get the recipe. It is called a John Wayne Casserole. I know it takes a lot of eggs.

Don't forget you can make your own home made pasta. Its something I want to do with all the eggs I am fixing to have next summer. I have a lot of eggs now but I have 5 more rir pullets in the brooder

So I know I am going to be covered up in eggs lol.

Darn!! You took mine!! LOL!!

If you're trying to use up the surplus...you can crack eggs into an ice tray and freeze them...them place in a ziploc bag in freezer to use for baking and cooking.

THanks for all the suggestions! I am really looking for *baked goods* specifically, like cookies cakes breads etcetera. While the AEB site does not have many of that type, I really appreciate being directed there because the other recipes will surely come in handy as well :)

Also thanks to Newchickenmom&kids for the idea of just cracking the eggs into ice cube trays for freezing -- now that you mention it, that sounds like a really good idea and will take up less freezer space than freezing cookies or whatever <g>

Heading off to the kitchen now,

Pat

Buckguy,

I googled this recipe and the only one I could find only uses 4 eggs.. is this it?? Im thinking it would be good with bacon too... and maybe fewer chilies..

4 c. shredded Cheddar cheese
4 c. shredded Monterey Jack cheese
2 cans chopped green chilies
1 3/4 c. milk
1/3 c. flour
1 tsp. salt
4 eggs
2 medium tomatoes, sliced

In a greased 13 x 9 x 2 inch baking dish; mix together the chilies and cheeses. Beat milk, flour, salt, and eggs. Pour over cheese. Cook, uncovered, in a 350 degree oven until center is set and top is golden brown, about 40 minutes. Place sliced tomatoes on top during last 20 minutes of cooking.
If you want to make a small 8 x 8 inch baking dish use 2 cups of each cheese, 1 can of chilies, 1/2 teaspoon salt, 3 eggs, 1 1/4 cups milk, 3 tablespoons flour, and one tomato.
