Baking w/ducks eggs ?

They're still real stringent on how it works in Texas, I'm just fortunate to have a participating dairy about 6 miles past my work. http://www.jerseygirlsmilk.com/ is the place I buy from. Their yogurt is also wonderful, we still haven't tried their cheese yet. They also will sell eggs, jellies, bread, even meat that other folks raise thru their "store." As soon as I convince my ducks to lay again, I'll be sending duck eggs out there!
 
if it calls for 2 eggs, then I use 2 eggs. I just made egg salad with our ducks eggs. It is gooood!

When I am baking gluten free I use a bit more egg. The lack of gluten makes the food a bit more "flat", so I increase the egg slightly.
I have a duck who lays double yolked eggs regularly, I usually do not bake with them, as the extra yolk inevitably needs more liquid, and it makes the recipe off.
