Baking with small eggs?

My chicken lays small eggs, but most recipes out there generally call for large eggs b/c that is what most people buy in the store. How do I compensate? Do I just use two eggs, or just go ahead and use one? (My chicken that lays large eggs suddenly stopped. Bummer.)

If you don't have a digital food scale you should get one. They sell them at Walmart and they are not expensive. I use mine a LOT!!!

1 large egg is 50g....I just set a bowl on my scale and break and eggs into it until I get 50g or close to it. If it's close but just short I add an extra yolk....makes everything a little richer.
 
i would use 2... if you have a kitchen scale you can weigh them just to see... but most recipes are pretty flexible

I measure mine by the ounce in a glass measuring cup. you could weigh, too, as PP stated. One large egg weighs 1.75 oz. That's what I do for baking, where you have to be more precise anyway. If it's something less precise I use the chart above.
