These birds look like Buff Cochins, hatchery quality.

Is "hatchery quality" a good thing or a bad thing?

It isn't really good or bad. It just means that they aren't perfect show quality birds bred for show, and likely came from a hatchery. Show quality Cochins would be deeper in body with more feathers and a fluffier appearance. Hatchery birds or hatchery quality birds aren't quite perfect (they are for pets/eggs/fun), but will still be great birds.
