Barred Rock mix?

Nope, not a Rock at all. Looks like a black Polish.

I know they're still young, but if it is a black polish do you know if it's a hen or a roo?

I don’t think it actually is a Polish, I did some research, but it’s still too young to tell.

I see why you're not sure! Two look like they could be part barred rock, but the other more solid black one does not. I wish I could help you, but I honestly have no idea! Sometimes it's fun to have a mystery though good luck

It might be an Olive Egger.
They are often a cross of a Cream Legbar with a Marans--which can give chicks with a crest (from the Legbar) and black feathers (from the Marans, depends a bit on which variety is used.)
