Beef Jerky Recipes

I'll post some recipes when I wake up, im way to tired to look through my cooking notebooks right now. Some of them don't have or need salt Silkie.

Salt is not needed in most of the recipes that I have use in the past.

High Plains Jerky

1/2 cup Worcestershire sauce
1/2 cup soy sauce
1/4 cup brown sugar
4 cloves garlic
2 teaspoons fresh ground black pepper
2 teaspoons ground dried red chile, (or other peppers ground or powdered)
1 teaspoon onion powder

Sweet Jerky

2 Clove garlic, minced
1/2 c Honey
1 Pinch pepper
4 tb Lemon juice
1 cup Soy sauce
1 Pinch salt
1 teaspoon onion powder

Herb Jerky

1/2 cup Worcestershire sauce
1/2 cup Soy sauce
1 ts Onion Salt
1/2 ts Salt
1/2 ts Garlic Salt
1/2 ts Lemon Pepper
1/2 ts Sausage Seasoning
1/2 ts Thyme
1/2 ts Oregano
1/2 ts Marjoram
1/2 ts Basil

These are what i have used in the past and have always turned out great.

Anybody have some more good recipes?

I've made this before with good results. If salt is a concern, remember the soy sauce and Worcestershire pack a wallop of sodium.

Approximately a 3 pound round steak, well trimmed. Fat will go rancid and cause rapid spoilage. Slice with the grain for chewy jerky. Slice across the grain for a more brittle jerky.

3/4 cup soy sauce
1/4 cup Worcestershire sauce
1 T. of rub (recipe follows)
1 T. garlic powder
1 T. onion powder
1 T. chili powder
black pepper

Marinate overnight. Drain, blot dry, then place on racks in the oven. Set oven at lowest setting and keep the door ajar slightly to allow evaporation. Depending on thickness, could take about 6 hours. Or use a dehydrator if you have one.

Rub Recipe

2 T. Lawry's salt (or your favorite seasoned salt)
2 T. sugar (white or brown)
1 T. chili powder
2 T. paprika
1 T. onion powder
1 T. garlic powder
black pepper
