I've made this before with good results. If salt is a concern, remember the soy sauce and Worcestershire pack a wallop of sodium.
Approximately a 3 pound round steak, well trimmed. Fat will go rancid and cause rapid spoilage. Slice with the grain for chewy jerky. Slice across the grain for a more brittle jerky.
3/4 cup soy sauce
1/4 cup Worcestershire sauce
1 T. of rub (recipe follows)
1 T. garlic powder
1 T. onion powder
1 T. chili powder
black pepper
Marinate overnight. Drain, blot dry, then place on racks in the oven. Set oven at lowest setting and keep the door ajar slightly to allow evaporation. Depending on thickness, could take about 6 hours. Or use a dehydrator if you have one.
Rub Recipe
2 T. Lawry's salt (or your favorite seasoned salt)
2 T. sugar (white or brown)
1 T. chili powder
2 T. paprika
1 T. onion powder
1 T. garlic powder
black pepper
