the pad she has on the pan. it's non-stick and can withstand high baking temps. it absorbs no tastes or smells.

it's like reusable parchment paper.

Yes, steve, that mat under the bread. It is a silpat. It is a fiberglass baking liner that nothing will stick too. I mean NOTHING.
