This, like others have said, will depend a LOT on where you get your eggs from. Some Ameraucanas lay some really blue colored eggs. Some Easter Eggers have bluer eggs than legbars. Some legbars lay blue tinted eggs at best.
There's a lot that goes into "how" blue the blue is. It being present at all is a simple dominant gene, but it being present well enough to be very-very blue is more complicated. It can also vary over the chickens lifetime or even the laying season. Most hatcheries don't prioritize egg color in their breeding... Or form... Or much else. Breeders will vary in what their priority is.
You may also want to temper your expectations slightly. Even the bluest blue eggs won't be super-super blue. They won't come close to plastic bag blue or tarp blue or anything. A lot of blue eggs even benefit from a little bit of the brown gene mixed in to make the color darker and more saturated. Many folks even color enhance their images to change how blue they look before sale.
