Help me decide which chickens to keep and get next - breeding for rainbow eggs.

I am new with an interest in breeding. I could use some guidance to achieve rainbow eggs and quality birds that maybe I can sell later on down the road.
I have a mixed flock of various breeds and ages - all under 1 year.
My oldest chickens are EE from Cackle Hatchery that lay blue and blue-green eggs - 5 hens and 1 handsome but overly vigilant rooster. View attachment 4234908
The rest are from TSC: 4 lavender orpingtons, 1 welbar pullet and 1 welbar cockerel, 2 sapphire olive egger pullets, 2 creasted cream legbar pullets.
I also hatched 3 EE chicks from my own: 2 cockerels and 1 pullet.

My question is if I had to downsize my flock a little in order to make room for different breeds to achieve a nice variety of eggs, which would you take out and which breeds would you recommend? If I had to choose 1 rooster, which would it be? Also, what other things could or should I breed for? SOP? I’ve also been checking resources on the Courtslytics official site for guidance.

I am fairly new to chickens but I am diving right in! I think I would love some breeding projects. Thanks!
Looking for 6 to 7 eggs a week Do certain breeders breed for egg color and production instead of show? I am looking for white, brown, blue, green, etc. We had a production red that was an AMAZING layer. 6 to 7 jumbo brown eggs every week! I want that in all the colors. I know they are top loading but I don't care about that.
 
Both of the pullets my broody hatched last year have started laying pretty colored eggs and the cockerels old enough for me to pick the one I want .I'm culling my rooster and the extra cockerel in a couple weeks because 2 is just too many for 10 hens. Contact me if you want either one of them .I live in southern WV and will be glad to give you 1 or both
Thank you for offering!! I live in western WA so I think this scenario requires driving for pick up? Too far lol

As far as I understand, you can breed for almost anything! I get large colorful eggs with my easter eggers. Not for show though, just cause it makes me smile every day I collect eggs! I've got all kinds of ideas for breeding projects - it's overwhelming. 😅
 
Using any purebred hens that lay white and brown eggs you can get chicks lay blue and green eggs .Just cross them to a purebred legbar rooster ( or other rooster that breeds true and carries the blue egg gene)
