Best Knives?

Do the poultry shears cut through the neck well? I have broken down a chicken with a pair of poultry shears in the past, and it worked really well. I don’t currently own any now though…. But I will have to pick some up!
I was looking at this scissors on Amazon, I like the fish scaling part and the large handle grip. However, I don't know if it can cut through a turkey's neck, it looks like they were cutting through joint gaps in the video.

Ya'll are close with the "Victorinox" recommend. Do it one better. Victorinox blades have those nice wooden handles. Very attractive, hard to clean perfectly.

Victorinox makes a "Fibrox" line - plastic handle with a no slip grip, cheaper than their main knife line (though the same sharp blade), and you can bleach the "stuff" out of it when you are done.

Ugly. But for the money? Can't be beat.

I just received this scissors in my mail. Its sharp and the combined blades are about an 1/8 inch thicker than my old kitchen scissors, so the new scissor is more heavy duty in comparison.
