Length of growing time
Size of white meat compared dark meat
Egg laying ability as well
Availability
Ease of selling extras
Ease of processing

Each of those could very easily be a different breed or multiple breeds
 
The Cornish X is, hands down, the absolute fastest-growing, meatiest, most feed-efficient meat animal ever bred in human history.

They aren't always the best for a given person's environment, preferences, or management style, but if you want plenty of meat fast with the least possible input of feed there is no comparison.
 
If you going for meat, you can't beat the jumbo cornish cross. If you going for both meat and eggs I would go with white Plymouth Rock hens for eggs and cross them with a dark Cornish rooster for meat and use the bigger off springs to set the meat line. The white Plymouth Rock lay large brown eggs from the get go. Other heritage breeds start out with small eggs and they get bigger when they reach full maturity.
