Best Tasting Chicken Breed

Hi there!

As you probably know by now I am a keen keeper of Silver Grey Dorkings here in the UK. I just came across this this article on a US site so I thought it was worth passing on:-

Another of my broodies is sitting on a clutch of eggs -- a mixture of pure bred Dorkings & Dorking x White Rock. As i am well-known for producing more roos than hens it looks like a tasty winter......!!

I haven't been posting much on this forum for a while because I was very busy with my garden & with TEG plus caring for all my new chicks. But I have been lurking here a lot so I haven't lost touch!

Years ago I had to slaughter a couple of Dorkings roosters(had way too many)..I have yet to make soup as tasty as the soup I made from the Dorkings. I've tried again and again..no luck. It is a pity as they are rare and hard to come by. In fact I am getting some more to try breeding them again. Poor genetic quality the first try. I'm going for the Red Dorkings.
 
Ever wonder why Grandma chose an Old Sett'n hen for the Sunday Chicken-N-Dumpln's ? She (the hen) being older was a little tougher so the chef had to cook her a little slower and longer, which in turn brought more flavor out from the bones, fat, tendons, etc. while at the same time slow cooking or par boiling tenderized the meat so that it would just about slip off the bone ! Not so much the breed but the know how of the Grandmothers of yesteryear taking time to nurse their awe aspiring Bon petite dishes and being methodical culinary southern chefs, which just don't exist in the average home of todays 9 to 5 Microwave Mom's world, LOL!
