best tasting heritage turkey?

The albc did a test and said the best tasting heritage turkey was the? I read their article and forgot what they said it was. Seems like it was midget white or the beltsville smallwhite? I heard someone on here say it was the same breed that they had named. Can anyone refresh my memory?

I can't say. My son turns everything around here into a pet so we raise and sell or keep and feed. We have to go to Kroger for our Thanksgiving bird with a whole yard full of strutters.

Now weren't they from certain lines? Does that mean that my Joeblow hatchery midget will taste better than the Wishard BR? I have my doubts about that. Also... would a regular person be able to tell the difference?
I also am interested in breeding for "delicious" How on earth you do it- I dont know...
Does anyone have a publication about what makes a turkey more delicious?
 
We raise 6 varieties of heritage turkeys and there is a difference in taste. Feed can alter the flavor of poultry as well as corn can add to the fat content. Since all of ours are fed the same we can toss that factor out. There is just something about the Midgets that give them the "extra". It's hard to explain exactly. If anybody grows their own sweet corn - you know when you pick it right at the time it's full of juice and extra sweet, if you wait a week it's still good but missing that "something". Does that make sense?

As a science geek, I like that you can control for things like feed and habitat. Very cool. Maybe its like those little alpine strawberries which are so tasty? Smaller, more concentrated flavors?
