Best type of coutrnix quail?

I am planning on getting coturnix hatching eggs next week. I remember hearing that the pharaoh/wild color tend to be more skittish and flighty. From people's experience, is this true? If so, what varieties are the friendliest?

A coturnix is a coturnix is a coturnix. The only reason id suggest sticking with goldens or pharaohs is that theyre easier to sex.
 
I don't think there is a differnece between the breeds, it just depends on the bird you get.

I have jumbos. They are wild-type color and they are NOT flighty. Nor are they friendly. In fact, sometimes I wish they were more flighty. Trying to fight off a bunch of crazed quail who want their mealworms NOW sounds silly but the little velicoraptors can really hurt when they peck you.

What are you looking for, eggs or meat?
