Best way to eat duck eggs

I love duck eggs and eat them any way that you’d eat chicken eggs. “Over Easy” without flipping (cover for the last minute instead) is my favorite. However, they are also great in omelettes, quiche, soufflé etc. You do need to be careful of the whites in some recipes: hard boiled duck eggs can be done, but steaming or cooking too long will make the whites rubbery. For hard boiled, use the no active heat method. We make meringue cookies with duck eggs. That also requires a different technique than with chicken eggs or again, you get a rubbery product.
 
They're really good to bake with. We eat them usually a bit runny (some people don't like this). We have done omelettes with them as well. Our dogs like the eat them scrambled.

Fried in coconut oil! Over easy. .don't overcook them they tend to get rubbery. :clap

Eggs Benedict! Anything runny. The yolk to white ratio is bigger than chicken eggs.
I am noticing a theme... runny yolks... my favorite!
