Best way to fix yellow squash?

Make thin slices. Dip them in a mixture of milk & eggs. Batter with italian bread crumbs. Them fry them nice & crispy. They make squash chips.

Chickens love the over grown woody ones. Just slice into rings & feed.
 
Slice a mess of yellow squash into a pot along with a sliced onion (vidalia if you've got it). Put in just enough water to keep it cooking - about a half inch - with salt and pepper and cook / boil till soft. Add a big ol' dab of bacon grease. Maybe some hot sauce. Best cure for the yellow squash that escaped notice until a bit huge and thick-skinned.
 
I mix sweet potatoes, yellow squash and onions together.
Cut them up all in the same size, drizzle olive oil, salt, pepper, onion & garlic powder and bake at 425 degress until golden brown.
Ive also wrapped them in foil and put them on the grill for about 25 minutes...


You can use any spices you like so experiment with what works for you.

Here's how we like it: Cook up a few slices of bacon, remove from skillet, cool and break into pieces, set aside. Now cut up 1/2 cup sweet onions and about 3 cups of squash, put into bacon grease in skillet (there won't be too much and there's your flavor!) then saute. When the squash is cooked and the onion is clear, add the bacon pieces and stir. Remove from skillet into a glass dish and sprinkle some cheddar cheese on top. Yum, yum:D
 
Fry as described by the "southern style" post. Eat with other foods or even....I know this sounds gross and I thought so too until I tasted it......place a slice of the fried squash on a peanut butter sandwich! Delicious!

We also just cube and fry up with new potatoes. Also cube and make slumgulleon in an iron skillet.

Cube yellow squash, zuccini, green tomatoes, red tomatoes, green peppers, hot peppers, onions, new corn, garlic into an iron skillet. Simmer until everything tender, thicken with corn meal, season to taste...preferably spicey! Good alone, over biscuits, over potatoes, over rice, over pasta, etc.

So good your tongue will beat you to death to get at it!

Yellow crooked neck squash really tastes good with Cavenders Greek Seasoning (round yellow shaker box) and onions...the flavors really complement each other.

For young squash: cook chopped squash and chopped sweet oion and chopped pepper if desired, until tender in a small amt of water. Drain, mash, add butter or olive oil, Greek seasoning. You can serve it like this or add cracker or bread crumbs, grated cheese and bake until cheese bubbles and it is set.

You can also stir fry the same veggies in a little oil and season with greek seasoning.

You can simmer chopped squash, celery, onion in chicken broth until tender. Add poultry seasoning, corn bread, stuffing mix and fix it however you like dressing. Bake with cooked chicken in it or serve it as a side.

For more mature squash, remove part of the seeds if desired and grate squash and press or drain part of the juice out of it. Add chopped onion, flour, egg, greek seasoning. Drop by large spoon fuls into skillet with oil or Pam. Cook on med until browned on each side.

I have a great relish recipe for yellow squash that only requires a water bath to process if you like to can at all.
 
Slice the squash into your preferred thickness (1/8 in to a 3/8 in...I usually go with 1/4 in or slightly thinner). Sautee in the skillet until slightly browned (or at least cooked to your liking). ix in a few tablespoons on cream cheese (depending on how much squash you cooked...just enough to coat all the squash). Toss in fresh or dried basil and serve. Sounds weird, but it is YUMMY!!!
