Best way to go cheaply?

I've considered a chainmail butchers glove, but I don't have the knife control with it. To date, I've poked a finger and broken the skin across the top of a knuckle (don't ask, still trying to figure out how I did it) - evidence of both had disappeared in days, no bandage required

I use these on my left hand only (I'm right handed), with almost full dexterity.

To kill birds I first used a very sharp big heavy duty pair of pruning shears. There was no way I could wield an ax. I then started using a utility knife or box cutter to cut the jugular veins. I changed the blades often so the blade was always very sharp. I tied the legs together with baling twine, hung the chicken at a convenient height and then cut the veins so the chicken would bleed out. I had a big pot with scald water. I found the water penetrated the feathers better if you put a squirt or two of dish detergent in the scald water. If you get a good scald the feathers come right off. If you can flick the skin off the legs with your fingernail, the scald is about right. I also did not try to process the whole batch of chickens at once. I would do just three or four a day. Even at that modest rate I would get through the whole batch of 25 in about a week.
 
I bought a medium size kill cone from Amazon, but when I started raising Cornish cross, the medium size was too small. I had to make a kill cone out of a 2 gallon plant pot. I cut the bottom out and cut one end to make a sheet and then I made the bottom 4 inches round and the top around 12 inches. I drilled holes and used zip ties to hold it together. I went up to 8 lbs, works as it should. I did two birds at a time and I didn't use ice, I put them in the refrigerator after I gutted them. When I had two more, I bagged the ones in the refrigerator and dropped them in the freezer. After I had 8 of them, I dipped the shrink wrap bags in hot water and put them back in my freezer. I let them sit in the freezer for an hour and then put them in the refrigerator to rest a few days before storing them in the freezer.
