Do you ever add anything (shredded chicken, black beans, etc) to the cheese filling? If so, do you ever change the underlying recipe? (more/less cheese, different spices, etc.)
Sometimes I do add chicken. I have added ground beef in the past, but we now have a family member allergic to mammal meats so I don't now. I suppose I could use ground turkey and season it like beef. Usually the cheese filling just consists of shredded cheese, finely chopped onion, and a sprinkling of hand-rubbed dried oregano leaves (because we never had fresh growing up and dried is plenty potent). Other than that, this is a basic recipe, dress it up according to your and your family's tastes. I would not put beans in it because I always serve beans and rice as side dishes, but by all means, get as creative as you like!

I do love rice pudding, but don't make it. My picky husband wouldn't eat it...
 
I don't know if anyone here would eat it but I don't care. I'll eat it all myself if I find a good recipe!
I actually just bought some from the grocery store. I think it’s delicious, but can see how homemade would be even better! Maybe with raisins… :drool
