Nothing like a BIG breakfast to make you feel like you're NOT dieting. LOL
You use a microwave omelette maker or a square microwave container and then fold the contents once coooked.
Mis en place:
1 egg white
1 whole egg
pinch of S&P
1 1/2 Tbls water
tiniest dab of butter (or cooking spray)
1 cup diced vegetables:
red bell pepper
sliced mushrooms
1 diced scallion
1/4 diced tomato
Preparation:
Rub microwave container with small dab of butter (or use your preferred cooking spray or spread). Lay vegetables into container so they are evenly distributed, season with a little seasoning salt and pepper.
Place eggs, water and S&P in medium bowl, add a pinch of dry herbs such as herbs de provence - whisk well with a fork for about 90 seconds. You want to incorporate a lot of air into the eggs.
Now genly pour eggs into microwave container, close it and microwave for 2 1/2 minutes. Let eggs rest covered about 45 seconds to finish cook. Plate and serve with sliced tomatoes seasoned with a little salt and one or two sprays of your favorite low cal spritz dressing. Very satisfying (in photo you see my breakfast with non-WW bagels).
Also notice the mother hen breakfasts: microwave cooked eggs, fresh romaine lettuce and grated carrot - the newborns devour this.
