One of my Easter eggers ate just a little bit of bird poop will she be ok?

Should be fine.
Make sure you are giving them enough protein and vitamins. I do not believe commercial foods have enough of this in them. I feed a lot of whole grains and for the ones that do not free range they get added goodies such as kitchen scraps, my own made up mash or something that will fill their needs depending on what they are craving.

If they need it they get it where they can. Some foods they can not digest well and often depends on individual birds.

Sorry this is so gross, but we have a tractor for our broilers (large movable pen), and the layers pasture range. Well, whenever we move the tractor, the layers think we've prepared a fantastic banquet just for them (dog loves it too

). I've heard that a large portion of their poop is undigested food, so think of it as a "second harvest."
