I think this is more true on the industrial level using averages from a larger quantity of eggs. Within a single smaller hatch, you're dependent on the fact that you may or may not have an equal number of undeveloped hens and roos to begin with. We've all had really good hatches when almost all of the eggs hatch and we still get uneven numbers. It may be an insignificant difference in a smaller hatch, I just thought it was interesting. What I read did not give hard statistics.
