Bleed or not to bleed

I had 20 cockerals I brought off a man in the pub for a couple of pints and killed an ate which were very nice but now trying to do thing a bit less gun ho for family by reari g my own cobbs, question is do people bleed them out when killed or just pluck them, I dont leave anything else to bleed out but just wonder g if it makes any difference
 
I do. I wring their neck and then chop head off. Then I hang them up so that as they flap they don't bruise the meat and bleed out.
If the plan is to freeze them, i then brine them for 3 days in salt water which also draws out some blood.

Ive been taught this process since i was a boy. Ive never tried not bleeding them out, but I would imagine it would add a "minerally" or "gamey" flavor, which I do not mind.
 
I had a neighbor that after processing the carcasses into parts would put the pieces on a bed of ice in a cooler and cover with ice for a day or two and allow the water drain out the cooler drain. I had never seen someone do it with chicken but have seen that with deer.
