Boiled eggs sticking to shell????

Just tried this weekend to hard boil fresh eggs for the first time, timed it carefully then immediately plunged into cold water plus ice. But they would hardly peel and we lost so much good egg! Although we ground it up and fed to chicks, I want it for me

Happy New Year!

I goolged this problem and came up with a method that has worked great so far. First the eggs are idealy at least2 or 3 days old. Second put them in the water when it is at a hard boil, this seems to shock them. Putting them in the water, and then bringing it to the boil failed miserabley. Time them and when done, about 15 or 16 minutes for ex large eggs, remove them to ice water. And I mean like half ice and half water, this also helps shock the egg. I keep adding ice as it melts, and I let them sit in the ice water at least 30 minutes. Then I put them and more ice cubes in a bowl and in the fridge. After the ice melts I just dump out the water, let the eggs sit overnight and they peel like a dream. Hope this helps. I tried those eggies they sell on tv, and they do work, they are a pain to put together, and a pain to wash.

I know this will sound strange but I had a visitor from South Korea last summer. He showed us how they solve the problem of eggs that don't peel easily. You crack the shell at the large end and then put your mouth over the crack and blow hard. This introduces enough air between the membrane and the hard cooked egg to allow it to peel. I have tried several times since then and it works like a charm.

I tried just about every trick mentioned on here, baking soda, salt, ect, ect. The only thing that works for me every single time without fail no matter what is very simple, leave the eggs in a basket on the counter for 5 or more days. Trust me, it's the only way I do it. The only thing I haven't tried is steaming so I can't speak for that...

I don't have any advice, but thanks for all the replies. I'll have to try some of these methods. I had a customer when I first started selling eggs who refused to buy my eggs again because he couldn't peel them.

How to hard boil AND peel farm fresh eggs:

Use the oldest eggs you can, 7-10 days if possible.
Submerge eggs completely in a pot of cold salted water
Bring water to a boil, turn the heat down to medium low and set timer for 10 minutes (or adjust according to preferences, this step is not as critical)
Remove from heat and drain hot water. Toss the eggs back and forth in the pot to crack the shells fairly well
Fill the pot with cold water and let sit until eggs are cooled down
Peel eggs submerged in the cool water

Nice tips, everyone. I'm gonna have to try them all out to see what works best.

By the way, goldtopper, I LOVE your avatar!!!

I boil eggs the day they're laid and they peel easily. I use this method. When they're done boiling, I immediately put them in ICE water and keep them in it for 5 minutes (and make sure it stays icy for the whole 5 minutes).

All the receipts I have read for pickling eggs says to boil eggs that are two weeks or more old. Fresh eggs do not peel well, as everyone has noted. I have not tried the salt in the water trick yet, so I cannot speak to that.
