Boiled eggs

I've never done the ice water thing. I just steam them and then run cold tap water over them for a bit to cool them down and put them in the fridge. It works for me. I've seen the ice thing mentioned a lot, but never really had an issue without it, so never tried. I will say that boiling day old eggs (as opposed to steaming) is a waste of time and eggs. You destroy them trying to get the shell off. I used to give away my fresher eggs and save the older ones for myself so that I could boil them.

The ice water will stop the eggs from cooking faster. The pressure cooker method would need the quicker cool down

Yes, it stops the cooking but mostly it makes them contract faster,
which pulls the contents away from the shell.
If you crack the air cell end of shell before immersing, it breaks the vacuum and also allows the ice water to get inside and separate shell from egg even better...best only done when using eggs right away.
