How do you easily remove the egg shells from boiled eggs?? Don't the shells on really fresh eggs tend to stick to the egg white, and you peel alot of the white off with the shell, and waste it??
 
My method is lower into fully boiling water which has been salted (2-3 Tbsp) and boil 10 min, then drain and drop into a bowl of ice water, which is large enough and iced well enough that there is still ice 5 minutes later. From reading here I doubt the salt matters much, that it is the ice shock that makes it work. In the FAQ forum you will find links to 2 or 3 threads where people talk about the various methods that work for them.
 
I have found the only way to get the shells off easily is to let my eggs age on the counter for 3-5 days. If the eggs are too fresh no matter what you do the shells will stick.
