I love my Bourbon Reds -- they are great turkeys. I have some chicks right now, wish I could sell some to you, but you live too far away.
Turkeys ARE bigger than chickens and therefore need bigger spaces. I clipped mine's wings -- it wasn't hard to do, just took a second. The hard part was catching them. You just clip a wing on one side. She wouldn't have been able to fly over the 5 foot fence, at least not for 3-4 weeks until the feathers grew out again. They can still jump pretty high, but I would say the limit was 3 feet, possibly 3.5 with clipped wings.
But it's a moot point now. Best of luck.

I'm sorry - I feel bad for her and for you. Where in Phoenix does this lady live? I live in Glendale, near 75th Ave & Union Hills and we had one of our chickens taken by either a bobcat or coyote a few years ago. I found the tracks and the place where it jumped over our 6 ft tall block wall and assumed it was a coyote, but game & fish thought it sounded more like a bobcat.

That is so sad. Now you need to find a local breeder and get a BR poult. They are sweet as can be. We have ours now. The turkeys we have are really sweet and roost in the coop with my chickens. These poults are number 5 and 6 for us.
