Breakfast Casseroles

I do this every Christmas morning...

1lb sausage (or ham or bacon)
6 slices bread, cubed
6 eggs
2 cups milk
1 tsp. salt
1 tsp dry mustard
1 cup cheddar cheese

Brown sausage, crumble and drain.
Put bread cubes in bottom of 9/13 inch baking dish
Sprinkle sausage over bread
Beat eggs, add salt, milk, dry mustard and cheese.
Pour egg mixture over bread and sausage
Refrigerate over night
Bake
350 for 45 mins.
Serves 8-10

Sounds yummy... thinking when our chickies start laying a bunch of eggs we will be eatting stuff like this alot!

My breakfast casserole seems to be a little different.

Here's what I do...

The day before cube up bread slices into about 1 inch cubes, or pinch it up.

Lay this in the bottom of the casserole dish.

Beat 1 dozen eggs (for one large casserole dish) with 1 cup whole milk and 1 cup heavy cream. You can use 2 cups whole milk if you prefer.

Make your filling. The standard is one roll of sausage, browned. One pack of bacon, browned and crumbled. Small onion and bell pepper diced and cooked in the meats. Drain the grease.

Pour the filling over the bread, top with 2 cups shredded cheddar cheese, then pour egg/milk mixture over this.

Then, I take a hand beater (manual, not electric) and whip everything up..Let sit in fridge overnight.

In the morning, put it in a 400 degree oven for 1 hour, or when top gets browned and eggs are set.



Here's a few things I've found:

French bread seems to do better than regular bread. Cut it into 1 inch cubes. You can use the half-price day old bread from the store. It actually works better. You just have to put a little more liquid in.

You can adjust the fillers to whatever diet the people need. I do a vegetarian and just lightly saute the veggies (onions, mushrooms, tomatoes, peppers, etc) before adding them. Asparagus is really good in this!

Ham, sausage, bacon are all wonderful. Get creative and think of great omelet or pizza combinations. Use those, and people will go nuts!

I usually use 1/2 heavy cream and 1/2 milk. It makes it fluffier.

This is really filling. I suggest having someone serve it for the kids, rather than letting them get huge pieces and not be able to finish them.

I serve this with sliced fresh fruit and muffins. This is a standard for holiday breakfasts.
