Around 6 weeks old is my guess. The color of the beak isn’t abnormal I think. It’s hard to say really. They’re still growing and being a mix it’s really hard to say what’s normal or abnorma. In Toulouse adults sudden beak color changes is abnormal, that happened with my gander Parsnip, but mixes with Chinese types and grey goose types can have a lot of rapid color changes, and I’ve seen toulouse and mixes be that pale normally so I don’t think it’s a concern unless they start acting lethargic.

As for a name, they’ll make it theirs whatever you choose to name them, so gender specific names aren’t an issue even if they turn out to be the opposite with geese, Henry’s that are girls and Polly’s that are boys are pretty cute.
Personally I have a lot that are named after days of the week, Flowers, fruits, and vegetables so there’s plenty of options there.
