White is unpredictable--you have NO idea what colour or pattern genes are hidden by the white. It i like pulling an unknown can from the panty to add to your soup. It could be a can of spinich, peaches or pumpkin pie filling. Might add wonderful flavour...or send you gagging.
Partridge is easier as in you KNOW what you are adding to the mix. You will get blue or black partridge, but with incomplete penciling. Now if you want penciled birds, this is a good way to get them to start with, but it can also be difficult to completely remove if that isn't the direction you want to breed towards.
