Breeding EE mutts

Hey,

I would like to breed chickens that lay lots of large colored eggs. Are there better/worse crosses, if I get a "true" Ameraucana rooster to do the crosses?

You can see the hens I currently have in my signature line. I'll probably buy some RIR/NHR (that's a separate question, which would I like better?) and some rose-comb brown leghorns this spring. Has anyone crossed these with an Ameraucana?
