BREEDING FOR PRODUCTION...EGGS AND OR MEAT.

Change of pace...and subject. I decided to bake a couple pans of Cat-Head Biscuits and sausage gravy for the hard workers. They think I'm sleeping in. Also home fries flavored with garlic, black pepper and goat butter.

If they want eggs after all this, (doubtful) ....I'll gladly fry them.

Sounds yummy! I've never heard of "Cat-Head Biscuits". I had to look it up. Hooray for the internet!

Mine are slightly different than most... I use goat butter, (quite a bit of it) goat-buttermilk and just half cup of ice-cold water because the milk is very thick. Everything is almost ice cold...sorta' makes my hand hurt when I start out. If I say so myself...they really are great!!!

P.S. I looked at some of the recipes on the net...not like mine.

Mine are TALL and separate into flecks...like hay. I don't use a rolling pen but rather flip the dough over about 6 times, then flatten it out by hand to roughly 2 inches thick, then cut the biscuits, lay them in an un-greased pan because there is already plenty of butter in the biscuits. I let them set on a counter 'til the oven reaches 550 degrees and holds for about 5 minutes...then put the pans in, allow then to bake that high for about 5 minutes and drop it to 450... takes about 28 minutes...turning the pan around half way through...

If anyone tries it...let me know how it turns out.

I've never used goat butter, wouldn't even know where to get it

Talking of them biscuits and gravy makes me hungry. I'll have to try the biscuit recipe someday. My wife and I both make homemade buscuits. This is becoming a lost art these days. Our children ( kids) have not tried to make any yet. They have barely mixed up cornbread.
