BREEDING FOR PRODUCTION...EGGS AND OR MEAT.

We're having fresh ramps this evening. My kids and 'son-in-law' are out digging them now. With the first snow here, they can more easily see the old stalk. They then pull back the leaves and dig up the fresh white delicious goodies! If they have more than one inch of green leaves on them, we won't even bother with them.

Here's a net pic...

YUM!!!!!

Seriously? I've had those only once, and we re-named them CRAMPS. But we ate them with lots of the green leaves......... did we do that wrong? But I swore never, ever to eat them again. Worse than living with skunks, I tell ya! You really have to love someone to put up with them after they eat those things.

I have alluded to the prospect that I won't be around here (BYC) for a LONG, LONG time and I've told one person outright. After Friday, Jan. 8, I will be taking a 'leave of absence'. After an appointment in NYC, my daughter and I are going to the DEEP SOUTH for vacation and should be back in the States by the last of Feb. or perhaps a bit sooner. WE are both taking laptops and Ariel may check in or even join but I think this thread and BYC needs a respite from me. I have a lot of things to get done that won't get done if I sit on my butt all the time with my face in this screen. I will honor the promises I've made and those who are involved have my personal email and/or my home phone number. I hope everyone will carry on and keep this thread alive. I've noticed that it actually does better without my silliness. I will be in contact with those who are to get rabbits, birds and puppies before I 'sign off' to make sure we have open lines of communication. RON
Hope you have a great time...we will look forward to your return

We grow these in one of our garden beds. Never thought about harvesting them in mid winter. We harvest in spring, fry potatoes in bacon fat and add chopped "spring" or ramps and crumbled crisp bacon.

Like many country vittles, ramps now are served in the most famous restaurants (4 Michelin Stars) all over the world, especially Asia. When served in these eateries, they frequently command prices on par with the Black Truffle.

I have no idea what they cost here now but you can bet they are very expensive. Fortunately they grow all over my property by acres and acres but pretty difficult to get this time of the year, hence the high demand and corresponding cost.
