This is a bread pudding cooked in a pressure cooker. The pudding is cooked in a souffle dish on a rack in the pressure cooker:

For those recently hitting this thread, I'm posting this link about caponization that I feel certain will help with your efforts to understand the art. It's not rocket science but it does require honing your skills.

When I help someone learn to caponize, rather than risking more valuable birds, I order 15 or 25 Austra-White cockerels from Cackle Hatchery. They are dirt-cheap and I've found them to be just about the best subject to work with and make a fine finished product.

That is a very good idea. I have been reading up on caponizing but have yet to do the deed. Having birds expressly for that purpose would give me more confidence to try.

Does anyone have any links or advise on where to by good equipment?

For caponizing tools, check Poco Loco...on the thread. I bought extra supplies through her that she imports from China. She also hosts caponizing clinics.

Her username is Poco Pollo, and she stated she won't have extra tool sets until after her two March caponizing clinics (in Oklahoma, at her house). Another option is to post on that thread that you are looking for tool sets - I got mine from another person who gave up on it.

I haven't completely read through that thread yet, figured I would when it comes closer to the time to try my hand at capons. Probably already answered on that thread, but how does the tools Poco Pollo gets compare to the ones hatchery catalogs sell? Poco's better tools? Cheaper?
