BREEDING FOR PRODUCTION...EGGS AND OR MEAT.

I just spent an hour processing my Ameraucana-Dorking mix rooster, Copper. I've never seen so much fat in one bird!!!! He was 1 yr 1 month and 11 days old and so loaded with fat that I struggled to find his organs to remove them. Even the first bird I ever processed took me less time than that boy! I just hope it means he'll taste phenomenal once I roast him....after four days of brining.

Should work out fine with the bird being mildly brined for 4 days and slow roasted...at 250*/275*...my opinion, covered then browned, uncovered for 20 minutes at about 375*.. I will be interested in seeing the results.

Should work out fine with the bird being mildly brined for 4 days and slow roasted...at 250*/275*...my opinion, covered then browned, uncovered for 20 minutes at about 375*.. I will be interested in seeing the results.

Normally I would roast him in wine, but with all that fat a nice dry rub to crisp the skin sounds tempting. He weighed in at 4.8 lbs so he'll take about 5 hours to roast at the temps @hellbender indicated. I'll post photos of the finished bird.

That would make a nice snack for my Tilapia.
It's a little native brookie....illegal under 6 inches and that WAS under the size limit. They say they saw a few larger ones dart from place to place but if they say the trout, the trout also saw them....The larger ones don't get that way by ignoring what they see.

Worse wet...Ariel wants to take Matty on a bear hunt one night this week, with her friends who hunt three or four times per week. I won't raise a stink because that will have them go for sure. Aaron and friend are staying with dad for the next couple nights or so ....I guess it will do no harm for Matty and Ariel to get out a bit because they will take over next at the hospital.

The Drs want to send him home and that scares me more than if they wanted him to stay longer.

By the way...bear hunt...means exercising the dogs and bears. In WV, dogs can chase game year 'round without any firearms.

but hopefully you were able to scrounge up something later. I do hope your dad is being sent home because he's better, I'm sure he will enjoy being at home way more than being in a hospital and I do hope it lifts his spirits.
