How did you teach yourself to caponize? Any resources you can direct me to in particular?
Here is some references that I used. One of these is a poultry book, another is a veterinary animal castration book and mat require that you look at the table of contents to find it, and a couple are booklets from Kansas State U agriculture station and the sears capon set:

I read all of these, and studied them. I had a nice long post about this, but accidentally deleted it. So I am going to have to redo it when I have the time. Hope this helps for now.

Also, go to Kassaundra's thread about caponizing....it is always near the top of the meat birds forum.

Good article! Thank you for posting it! So, does anyone here in the States have the grey Bresse??? I love the way they look! I have an affinity for black and white chickens!
