I know this is an old post, but I'm going to respond in case it is helpful to someone in the future. I too was having trouble with my trays not leveling properly. When I googled for help, it brought me to this thread. All it took to correct the issue was a 2 minute conversation with Brinsea. Of that 2 minutes, at least half of it was spent with me trying to hit all three buttons at the exact same time to access the calibration menu.
The issue with the trays not leveling is a power issue. The incubator comes out of the box programmed to 50Hz for Europe. You need to change that setting to 60Hz for North America. Here is the ideal place to consult your manual, page 16-17.
You need to enter the calibration menu by pressing all three buttons at the same time. It may take you a couple tries. Heck it may take you 243 tries, but eventually you will see the screen read "CAL TEMP". Advance through the menus with the + button until you land on "HZ". At "HZ", select OK. The screen should show "60". Switch that to "50" then proceed to the "SAVE" screen and save your changes, which should take you back to the main menu.
Initiate the trays to level and see what happens. They said it may take a couple turn attempts before it was stopping perfectly level. Mine did not. It stopped level on the first attempt. Good luck!
