Just an update. My one white legged CX hen was culled last night. She was too close to the side of the tractor last night and started flappiong her wings for some reason and broke both wings. I have aways thought that she was kind of the runt of the little, and I was right. She was still running around when I found her so I slit her and bled her out. It wasn't until I started skinning her that I found out how small she was. She was part of the second half of the batch that is almost 9 weeks, she was probably 1/3 the size of the rest. When she was about half skinned I noticed that the meat was a different color then usual, and a much softer texture, to the point that it made us scared to eat her. She was definately a CX, but it makes me wonder if this particular bird didn't have the right genetics which gave her the white legs, and slower growth, or if there was some kind of health problem that may have caused both legs and slow growth.
I do agree with jaku though, a lot of hatcherys have slightly different varieties that may have different things that shown through.
