My Spotted Sussex, Dottie, is a relatively new egg layer.(About 1 month) She is the only one of my 3 pullets who is laying. Today I found her egg pecked with a hole and a crack. Is she going to be an egg eater?

No..Possibly just got damaged so she investigated it. Ensure you have good nesting material. Straw over a bed of shavings works.
 
She may have not been the one that pecked the egg:)
Chickens are curious about things, so the egg is something new!
Try putting ceramic eggs or even golf balls in your nesting boxes, they will quickly find out that these are just too hard to crack.
Oh, and collect your freshly laid eggs a soon as you can.

Was the shell thin...and thus easily cracked when pecked out of curiosity or stepped on??
Are the nests nicely bedded so eggs won't break when landing?
Usually curiosity pecking happens the first week, may be one of the pullets not yet of very close to laying.
