Broody hen question, she broke them!

I have all Bantams and a few silkies. One of my black silkies is the champion broody hen of all the others. When she goes " broody " some of the others ( one of two ) will try to sit on the SAME nest with her...I have let them hatch out several clutches in this manner, however, I have 17 chickens about 8 roosters and I don't need any more chickens ! In fact, I need to get rid of all but 3 of my roosters.
I have routinely removed eggs out from under this silkie because I am trying to keep my numbers " down." I sometimes replace them with the plastic easter eggs and she doesn't seem too upset. When they do hatch out, she is a great little mama,
Anybody out there have any EASY to catch chickens ??

Other than that you can grab them when they're roosting at night.
 
I have always that the best time to catch them is when they're roosting. BUT, if we open the door they get really squawky and I know if I grabbed one they would FREAK out !
We need to grab about 7 !! I guess there is no way but to try it.
