Brown or White, does it really matter?

I have a thriving egg business and my customers all seem to love getting a variety of shades of brown mixed with blue and green. I can't believe how much difference appearance makes when shell color has absolutely nothing to do with nutrition, it's simply a matter of aesthetics and perception. I used to keep a few white egg layers (I loved my adorable Cream Brabanters) but I've sold them because none of my customers want white eggs and I actually prefer a beautiful mix of colors myself. I suppose it's like going to a restaurant, I always prefer well presented, "pretty" food.

:drool I think that the brown eggs have a richer taste.I have also been told that the homegrown brown eggs have a better and richer taste from people that I have given my eggs to.I have been told by some that they don't care for the brown eggs because they are to rich.I don't know if it is in your mind or taste buds but some say there is a difference.Me for one.

back to the thread, for proprietary's sake... My customers think brown eggs are better, too. Just wait until I'm selling them blue eggs. If any of them HATCH.... oh, sorry, back to the thread topic...

How times change....Way back before WWII, everyone had home flocks, mostly brown eggs....and white eggs were considered upscale. My dh's grandmother made a business of leghorns and sold white eggs for a premium at a local store. (Like a complete filp-flop to the brown egg preference of today). His grandmother did so well, that she put both her daughters through college on egg money. Isn't that Amazing?


I love it that I can tell the difference in each of my hen's egg by appearance and size. I just added a white layer (Ideal 236) and it is neat to see a white among the brown. I agree with the folks here that want green, blue and dark brown....and don't forget speckled like some Welsummer's lay. In one grocery store I found a case of brown speckled eggs.---

Variety is the spice of life.
