As said in title, this is the first time I'm baking with quail eggs. I sort of eyeballed it and think about 5 equals two large chicken eggs? Maybe a tad bit much. What's your ratio?

I don't have quail, But my chickens are Bantams. Some of those eggs also vary in size.
I simply look at my recipe, and determine how much eggs in WEIGHT it calls for. Then I simply use the amount of bantam eggs that is as close to the Large size eggs recipe calls for.
I use the digital scale to take out all guesswork.
In my case, the average result,,,,, is 3 bantam eggs equal to 2 Large regular eggs. Yes,,, my bantams do express some decent size eggs for small chicken. " Ouch,,,"

Just to calm your concerns,, baking recipes, are not like prescription formulas. You can use some more, or some less, and still get very similar results in your baked product.

2 large eggs.
