Butchering a goose the same as a chicken? UPDATED W/ UGLY COOKED GOOSE

We have 4 drakes and 2 geese that we plan on butchering this weekend. My husband, having only chicken-butchering experience, wants to know if it's the same. I'm betting it is. Does anyone know? Any special precautions? Thanks!!!

I butchered 10 ducks last year and I didn't do anything different than with chickens and it was ok. Good luck!!!
 
It is a bit more difficult to scald a goose because the feathers are more dense than a chicken's.

basically the same.. a little more greasier..

keep them off feed for about a day before you kill them.. less mess when gutting them out.. I still let them drink water, though..
 
Secret, when scalding add a couple of drops of soap to the water, it will allow the hot water to get down to the skin, also there is a lot more pin feathers on ducks

I built a plucker and tried the soap trick.. It (plucker) works better without the soap..

plucker does a great job on ducks.

geese was so-so..

I heard that if you stretch a burlap sack over the scalding kettle and lay the geese on that you can pluck the feathers by the steam rising.. I have never tried this.. I do not know if you have to scald them first, either..

try it and let me know.. I have 22 geese to do this fall..

I would make a chicken wire in a frame to set on the kettle.. it would be more sturdy and the steam could rise through it more easily..

the farmer that told me about this died about 30 years ago.. I will call one of his sons and see if they can remember anything about it..

check this thread in a couple of days for the answer..
 
the main difference to me was that geese have stronger, thicker necks. my first kill wasn't clean because i was not prepared for that. so i will pass that on, to make it better for all involved.
