butchering a guinea

i am gettin ready to butcher our 2 male guineas is there anything i need to know before i do so?
anything to watch for as i go in to this?
any diff then doin a chicken?
will i need to scald them like a chicken?
will they need to age in the fridge?
thank you for any and all response.
 
Hi, CW. We butchered a few guineas a couple of years ago and we treated them exactly as we do our meat chickens. There were no problems and they made great gumbo and jambalaya!
